Weight Lost This Week: -.9 lbs

Total Weight Loss: -8.3 lbs

So I didn't do great this week, but at least I lost, right? Do I wish it was more? Well, duh. But, I'll take it. It's that time of the month, so I'm gonna blame it on water weight, being bloated and all that jazz. Then try my damnedest to make sure I do better this coming week.

Not gonna lie, this morning has been rough (more on that later), but I didn't wanna skip out on sharing my weigh-in here, with you guys.

P.S. if you have any tips for dieting while living with/cooking for a family who is not, I'd love to hear 'em. Because this seems to be my biggest challenge as of late.

Friday Favorites {2.24.12}

Wow, this 4-day work week really flew by, no? I'm loving that it's already Friday again! See, I'm not so hard to please. Just give my man a 3-day weekend every week and I'm good, lol. But really, someone should get on it. I have a feeling people would be much happier with this arrangement - assuming the same pay, of course. Who's with me?

We don't have any big plans for the weekend. We may go watch the fight (don't ask me which one because I have not a flippin' clue) at our neighbors on Saturday night, but other than this, we plan on laying low. Oh, and we might possibly make another trip to Ikea to pick up a second little chair. Because if my kids fight over the one we have one more time? Let's just say, it's not gonna be pleasant. Who knew a tiny chair would be such a hit? Not us, obviously.

Anywho, here are my favorites this week...

1. This video cracks me up so much! Even though RG is way sexier, obvi.

2. I wanna make a few of these animal head wall mounts for Nico's room. Very neat.

3. I'm usually too scared to cut my own bangs, but after watching this tutorial, I may give it a try.

4. This happens every single time I enter a Target. Clearly, I have a problem.

What's Cookin'? - Chicken Pho

For dinner the other night, we had chicken pho. This is currently one of my very favorite meals to eat, so it, of course, got A+ in my book. But, whether you're a seasoned pho lover or a pho virgin, you must try out this recipe, because it is pho-nomenal, like pho-real. Baha!

Unlike most other recipes I've seen, this one is super simple to make. And as you all know by now, I'm a big fan of the easy. This was so simple, in fact, that the hubs was able to follow the instructions with zero help from me. That's right, I can't take credit for this one, guys - the cooking was all him! I did create/adapt the recipe, though, which counts for something, right?

Okay, here's what you'll need/need to do...

Ingredients:

2 cans reduced-sodium chicken broth
1 lb boneless, skinless chicken breasts, cut into bite-size pieces
1 cup shredded carrots
2 tbsp fresh ginger, chopped
2 green onions, chopped
1 tbsp soy sauce
1 tbsp lime juice
2 tsp Sriracha
6 oz rice or egg noodles (we used rice)
1/4 cup cilantro, chopped
1/4 mint leaves, chopped

Directions:

In a large pot, bring chicken broth and 1 1/2 cups water to a boil.
Add chicken and simmer about 3 minutes. Then add carrots + ginger and simmer an additional 3 minutes.
Next, stir in green onions, soy sauce, lime juice and Sriracha.
In a separate small pot, boil rice noodles for 6 minutes (if using egg noodles, follow instructions on package, as cooking time may vary). Drain.
Divide the cooked noodles into 4 bowls. Then add the soup evenly into each of these bowls.
Top with mint and cilantro (and Sriracha, if you like it with a little extra kick) and serve.

The only (and I do mean only) drawback is that this meal isn't all that kid-friendly due to the spiciness. Neither of my kids are soup people, so they wouldn't eat it either way. But, if your kids are, you could just nix the Sriracha during cooking and then add it to your individual bowl later on.

Next time I think we'll add bean sprouts and maybe snow peas. The possibilities are endless, really. Enjoy!

Braved the crowd at Ikea
Bought this and this for the kids
Broke up around 5,648 fights over this (which we also purchased)
Observed many games of Chutes & Ladders
Made Nutella ice cream with Nico
Ate pho made by the hubs (recipe coming soon)
Watched DVRed Octonauts episodes
Put Nico in time-out on more than one occasion
Finally installed Photoshop on my computer

I'm sure there was more, but this is what I can remember at the moment. I've got a bad case of mommy brain going on, lol.

Weigh-In Day, Round 2 {Week 7}

Today marks 7 weeks that I've been doing Weight Watchers. This week I...

Weight ~~Lost~~ Gained This Week: +1.6

Total Weight Loss: -7.4 lbs

Yeah, so I gained weight this week. Womp. I'm not really sure if it's weight that I gained this week or last (since I didn't weigh in then), but either way, I'm pretty frustrated with myself. I just can't seem to stay on track. This week was better than the week before, but to be honest, it still wasn't perfect. I slipped up here and there.

The biggest problem I have is sticking to my diet when we're out and about. We don't really live all that close to any of the towns we do thing in, and it's really inconvenient to drive back home just to eat. However, we're going to trying eating at home all this week and see how it goes. I've planned out all our dinners and stocked up on Lean Cuisines for lunch (can't beat the WW points value written right there on the side of the box). Also, I'll be working out this week, something I sadly didn't do once last week. I was really busy but should've made it a priority. This week, I will. I have a feeling that doing these things will make all the difference.

Please don't give up on me! I'll get there. I had a couple of set-backs, but nothing that can't be fixed. This week is gonna be great. I can feel it!

Friday Favorites {2.17.12}

It's already Friday, whaa? And it's actually a 3-day weekend for Dan, which I had no idea about until yesterday. Nico's school is even closed, but somehow it didn't register with me that it could be a holiday (in my defense, his school is randomly closed at least once a month). Anyway, I'm pretty pumped about this info, and am now set on taking a day-trip somewhere. Dan has a friend who recently moved to Philly, so maybe we'll go up there and stay the night. Or perhaps a day in Richmond? We haven't decided yet, but I for sure wanna do something.

In other news, our neighbors (whom I frequently complain about) are moving out, and I'm not quite sure how I feel about this. On the one hand, we could get a really awesome and quiet replacement family. But, on the other hand, we could get a not-so-awesome (read: loud) clan. I'm really hoping we get the former. Keep your fingers crossed for us!

Our Trip to the Museum of Natural History

This past Saturday we took a trip out to D.C. to visit the National Museum of Natural History. It was super cold out, so it ended up being the perfect activity to keep the kids entertained while simultaneously not freezing our butts off. We all had fun and even managed to get the kids to sit (well, Lola stood) through a movie at the IMAX theater. All in all, I'd say the day was a success. There were zero meltdowns and only a handful of times that Nico ran off (he's a runner), which equals a definite win in my book.

Total Weight Loss: -9 lbs (unless I gained)

I know this post is a little late, but as I mentioned yesterday, things have been pretty busy over here the past couple of days. Better late than never, right? Not that I have anything to report, being that I wasn't back home until Monday night and therefore didn't weigh in. Honestly, I didn't even remember to do so until yesterday, and by then I decided it'd be better to just go ahead and skip this week. Why? Well, because I may or may not have eaten not so great over the weekend. Mainly because all of our meals were eaten out while we were staying at the hospitality suite. I'm pretty sure I gained weight because of this, but decided to cut myself a break. I figured I'd take this week to get back on track and see where I stand next Monday.

I know it may seem like I'm "cheating", and I sort of am (since technically I didn't weigh in), but I've decided to publicly share this weight-loss journey and in life, people mess up sometimes. I am not too proud to admit that I've done just that. But, what's done is done and all I can do now is move forward from here. Thankfully, this is something that can be fixed. One thing I am certain of is that this week will definitely be better than the last!

Now that Nico and I have finally finished up his Valentine's box and cards for school (all Cars, of course), I'm on the hunt for ways to make this holiday extra special for the kids. Friday Favorites {2.10.12}

We recently received word from our housing office (as in 2 days ago) that they'll be tearing up our kitchen floor over the weekend and we cannot be here while they do it. Not sure if I've mentioned this before, but we moved into this home last April. It's a 1950's home that was newly renovated, as in completely gutted and redone (basically all that was left was the shell). I love it, but the builders got these places up in a hot minute, and judging by the number of issues we've had, didn't necessarily take the proper measures in making sure everything was done right. The most recent issue we're having is with our kitchen floor. The grout in between the porcelain tiles has been cracking and coming out, which wouldn't be that big of a deal, except Lola likes to play with it and occasionally put it in her mouth. I called housing about it (thinking they'd just come fill in the grout or put some sort of sealant on it) and after sending an inspector over, it turns out this is happening because the ground isn't level and therefore has to be totally redone. So we've had to remove everything that's visible from our kitchen and laundry room slash pantry, which has been a big pain in the ass. Thankfully, they were nice enough to put us up in their hospitality suite while all of this goes down. You know, so we're not roaming the streets for the next four days. :-/

At first I was a little (read: a lot) annoyed by all of this, but am currently trying to see the positive. Since none of us want to be cooped up in a hotel all weekend, we're taking this opportunity to hit up the museums in D.C.; something we've been wanting to do for months. It'll be a little staycation of sorts!

Okay, now that I've told the longest story ever about our kitchen floor, I'm ready to share my favorites!

2. This wedding is definitely the most beautiful I've ever seen! Totally makes me swoon.

3. Melissa's 4 Mom Commandments are spot on! A definite must-read for all parents/parents-to-be.

4. Lately I've been on a decorating kick. Right now, I'm looking for antique crates like these to make a little reading nook upstairs for the kiddos.

I have to admit that I'm actually somewhat surprised I lost weight this week. Not gonna lie, I wasn't that good about sticking to my points - especially on Friday. For some reason, I have a hard time staying motivated after a week of not losing anything. I start to feel like, why am I even dieting when I could eat what I want and weigh the same? I know it's silly to think this way, but I still go there every time I don't lose weight. I just need to remember that I'm not necessarily going to lose weight every single week and that some weeks are going to be better than others.

This coming week my goal is to really and truly stick to my points. Also, I'm gonna try to get four work-outs in (instead of the usual 3). Believe it or not, I'm getting to where I actually enjoy doing it! I can't wait till it warms up a little so Lola and I can start walking in the morning while Nico's at school. Then eventually I'd like to turn these walks into runs. Has anyone heard of the Couch-to-5k? One day, in the not so distant future, I'd like to do something of this nature. As I sit here writing this, I'm thinking how crazy all of this would've sounded to me just a few short weeks ago. At that time, I literally despised exercise. It's like I'm a changed woman, lol.

Hello everyone! This week seemed to drag on forever, no? So glad it's finally Friday! This weekend we may attend a housewarming party, but other than that, no big plans. Last pay period was uber long, so we need to visit the grocery store like yesterday. Also, we're gonna try to hit up Ikea, you know, for house stuffs. And the kids still need haircuts, which will be happening this weekend. Nico's teacher actually said something along the lines of "That boy needs a trim!", so I'd say it's time. Other than that, we'll be ridin' low (yeah, that just happened). Oh, and then there's the Super Bowl, which I'm so excited about that I almost forgot to mention. :-/ I could watch basketball, no prob, but football? Pass (get it?).

What's Cookin'? - Bubble Up Enchiladas

A couple weeks ago, I made Bubble Up Enchiladas for dinner and holy jeebus were they delicious! Even Nico (my picky eater) loved them! Before you get all judgy thinking I'm bailing on my diet, I must tell you, this was actually a Weight Watchers recipe! Crazy, right? When I think of diet recipes, mexican food certainly doesn't come to mind. So obviously when I found this, I had to try it out.

Since I pretty much followed this recipe word for word and it's been all over the internet lately, I'm not going to post it here (just visit the link above). However, Weight Watchers people, please note that the points value given on this recipe is incorrect. With the updated PointsPlus program, this meal is now 10 points per serving, not the 6 it used to be. Since this is a little high to me, I recommend pairing it with a side salad or another veggie, just so you're not tempted to eat more of it - because you will want more!

"Pinning" {Week 10} - Take Me Away

This week's "pinning" theme is Take Me Away, which has me all sorts of wanting to take a vacay! Seriously, though - Dan and I have never been on a vacation together, ever! He deployed right after we got married, then I got preggo and there were kiddos and lots more deployments, which didn't leave a lot of time for this. And even if there was time? Vacations cost money! Money that has to be saved before it's possible. We are, however, hoping (fingers crossed) to make this happen in the next couple of years.

Here are some places we dream of going...

This will be my last "pinning" post, at least for the time being. Between this and all my other weekly posts, I feel like there's hardly any time/space left for just writing (which I want to do more of!). Something had to give and I feel like this is the post I'm least attached to. It doesn't mean I won't be doing other link-ups of this nature (and perhaps even this one) from time to time, it just won't be nearly as often. My plate has gotten significantly more full now that Lola is no longer a baby, and these types of post take up a lot of time. Time I could be spending with my kids or writing about things I'm actually going to want to remember down the road. Feel me?

Weigh-In Day, Round 2 {Week 4}

Today I have been doing Weight Watchers for a total of four weeks. This week I lost...

Weight Lost This Week: 0 lbs

Total Weight Loss: -7.4 lbs

Yeah, so I didn't lose any weight this week which is a bummer. I made a bad decision on Friday (that may have involved a pizza buffet - never a good idea) + I only worked out twice this week, so I wasn't exactly shocked by this news. I did, however, hope to at least lose something. Especially since last week's weight loss was so insignificant.

I have to say, after my round with the new Weight Watchers Points Plus program both last fall and now, I'm not really a fan. I felt like their old system, which was based more off calories than carbs, seemed much more effective. And after digging around on the internet, it appears I'm not the only one. For this reason, I'm actually considering some other options. One that is a strong possibility is Sparkpeople. I've heard great things about it and it's free. Plus, there's a group on there for people who were successful with the old Weight Watchers system, but haven't had as much luck with the Points Plus program (called SparkTeam, I believe). Pretty much right up my alley. Also, I'm still not totally opposed to the HCG diet (my stepmom has lost 12 lbs in a week!). I know it doesn't seem totally healthy, but, I could get the pills for free, which is pretty sweet!

Anyway, I'm still weighing my options (literally) - these are just some things I'm thinking about. Before doing anything, I want to discuss this with a doctor and possibly get my thyroid tested, just to make sure it's working as it should be. Unfortunately, it may take a while to get in because military medical care can be a bitch. Until then, since I'm already paid through mid-month, I'll being continuing with Weight Watchers. I mean, even if I'm not seeing huge results, it's still better than nothing, right? I've come to the conclusion that, regardless of which route I choose, it's going to take time. And I'm learning to be okay with that.

So, it looks like I'm getting sick again, and just in time for the weekend. Sigh. I'm really over all the sickness that's been passed around my home for what feels like forever. Apparently now that Nico's in school, the average number of times he'll be sick this year is like 10-12. This seems like an awful lot. And I never would have thought we'd all get sick every single time, too! Just stop sending you sick kids to school, people!

Alright, I'm done ranting. But seriously, just stop it! Okay, okay...I'm done. Ugh. Anyway, no big plans for the weekend other than to get the kiddos hair cut (which didn't happen last weekend because they were sick) and perhaps a museum of some sort. It seems like this is always the goal (a museum), but then something comes up or we get lazy. I'm hoping we can actually follow through with it this time. Even if my poor sick self has to suck it up and take one for the team, lol.

Wordless{ish} Wednesday: Let it Snow

Last Saturday morning we woke up to a surprise: SNOW! Actually, I wouldn't really call it snow, more like ice. But, we were excited nonetheless. We got all bundled up and hightailed it outside! For the whole 10 minutes we could stand the cold, anyway. Here's a quick photo I snapped of each of the littles (p.s. please excuse Lola's scowl, she was feeling under the weather - but isn't her little leopard print jacket cute?).

What's Cookin'? - Chicken Vindaloo

The other night for dinner, I made Chicken, Sweet Potato & Cauliflower Vindaloo. I know the name may sound a little funny, but, trust me when I say, you're gonna love it! Especially if you're a quinoa fan like myself. It is a little higher on the points side (12 WW points per serving), but it's loaded with healthy ingredients which makes it worth it in my opinion.

I actually found the recipe in the January issue of Family Circle, a magazine my sweet mother-in-law recently sent me a subscription for. To be honest, I had never read FC before now, but it really has a lot of good stuff in it - especially recipes! From what I can tell, you can get this recipe online, but are required to sign up for their free recipe library. For those who'd rather not do this, I thought I'd go ahead and share it with you here. Shall we?

Here's what you'll need/need to do...

Ingredients (serves 4):

2 tbsp vegetable oil
1 pound boneless, skinless chicken thighs (I used breasts)
1/2 tsp salt
1 lb sweet potatoes, peeled and cut into 1/2-inch cubes
1 large onion, chopped
1 medium cauliflower, cut into florets
2 tsp curry powder
1/2 tsp cayenne pepper (since I was feeding kids, I cut this portion in half)
1 can (14 1/2 oz) reduced-sodium chicken broth
1 can (14 1/2 oz) diced tomatoes
1/2 cup mint, coarsely chopped (we skipped this)
2 cups cooked quinoa

Directions:

Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Season chicken with 1/4 teaspoon of the salt. Cook for 7 to 8 minutes. Remove to a plate.
Add remaining tablespoon of oil, sweet potatoes and onion to skillet and stir-fry for 5 minutes. Add cauliflower and cook 3 minutes. Stir in curry powder, cayenne and the remaining 1/4 teaspoon salt; cook 1 minute. Add broth and tomatoes; cook 5 minutes, covered, stirring occasionally.
Add chicken and heat through. Stir in mint (if using) and serve over cooked quinoa.

If you're a vegetarian, but still want to try this? You could easily replace the chicken with tofu.

Weigh-In Day, Round 2 {Week 3}

Today marks my completion of three weeks on Weight Watchers. This week I lost...

Weight Lost This Week: -.8 lbs

Total Weight Loss: -7.4 lbs

So this wasn't my best week, but gosh darn it, I tried! I followed my diet and worked out 3 times, per uge. I'm pretty sure I'm just retaining water cuz it's nearing that time of the month, you know? About to be surfin' the crimson wave? Anyway, that's my theory and I'm sticking to it! Besides, at least I didn't gain this week, right?

This coming week, I'll be changing up my workout schedule a bit. It'll still be exercising 3 days a week, but instead of M-W-F while Nico's at preschool, I'll be waking up a little extra early T-Th-Sa. I worked out this past Saturday morning, while the fam was still sleeping, and it was so much easier than trying to do while simultaneously watching Lola. I felt like I got a much better workout, too. Plus, this'll free up the time Nico's in school for important things like Target, lol.

Oh, and I wanted to ask - does anyone have an opinion on the HCG diet? My stepmom and stepsister recently started it and are seeing BIG results. I've read a little about it, but not sure if I'd be able to realistically stick to only 500 calories a day. I mean, is this even healthy? If any of you have any experience with it, I'd love to hear about it!

Because right now? I am obsessed with boots. Any and all things boot-related. So much so, that if I had it my way, I'd own all the boots.

Friday Favorites {1.19.12}

I'm so thankful this was a 4-day work week for Dan because the past few days have been dragging. The kids have been sick all week long and I'm not feeling so hot either. I'm looking forward to him being home over the weekend to help. I know, I know...it's a thrilling life we lead, lol.

Wordless{ish} Wednesday: Little Buddy

On Monday, Wednesday and Friday mornings, Nico has preschool. During this time, Lola and I get some much-needed mommy/daughter time. She's my "little buddy" in every sense of the term. Wherever I am, she is close behind. She's a mama's girl for sure. And I love every single second of it.

Midway through our play sesh, she allowed me to put pigtails in her hair, which I, of course, had to snap a photo of. Because, really, is there anything cuter?

Our Trip Back Home (Part 3) - My Grandma

While back home in Texas, we made a special trip out to Denton to see my maternal grandmother, Grandma Claudine. Though I didn't spend a lot of time with her as a child (because I grew up with my dad and she's my mom's mom), we've developed quite a good relationship in the past 10 years or so. She's been there for me more times than I can count. Also, she's incredibly talented in all things craft-related and the best cook I know! She's in her 70's, but acts like more like she's in her 50's (very active, positive and cheerful). I hope to be just like her one day!

Weigh-In Day, Round 2 {Week 2}

Today I weighed in for my 2nd week on Weight Watchers. This week I lost...

Weight Lost This Week: -2.6 lbs

Total Weight Loss: -6.6 lbs

Guys? I'm feeling really great about this! Yes, it's not four pounds, but I'll take it. I mean, I've lost almost 7 pounds in just two weeks! At this rate, I should reach my goal in no time!!

This week I continued to stick to my points allowance and worked out three times. For now, until it gets warmer out or I join a gym that has childcare (whichever comes first), I'm getting my work-out in while Nico's in school (M-W-F mornings). No, it's not five days a week, but I'm hoping to build up to this. That's the goal, anyway.

Okay, I'm off to work out (with the kiddo, since he's out of school today). Wish me luck!

"Pinning" {Week 8} - Baby, It's Cold Outside

Dan has today off, which doesn't happen very often, so I'm gonna keep this short and sweet. I can't believe it's already Friday! Is it just me or did this week fly by? Not that I'm complaining because both the hubs and Nico have a 3-day weekend. What, what! We're hoping to venture out to D.C. and visit a museum or two. Now that Lola is pretty much weened (other than her feeding before bed), it's becoming much easier to do day-long activities such as this. What do y'all have planned?

Our Trip Back Home (Part 2) - Dan's Family

While home in Texas, we got to spend quite a bit of time with Dan's family. This year was special because all of his siblings were in town; something that doesn't happen on the reg. In fact, this was my first time meeting his brother, Casey, and his family. It's funny because I've seen pictures of him, but it wasn't until I saw him in person that I realized how much he and Dan truly look alike. In fact, all three brothers look strikingly similar. As one friend put it, they are "very Baldwinesque"! I think this describes them perfectly, but I'll let you be the judge. Here are some photos from our time with them...

Weigh-In Day, Round 2 {Week 1}

As you may have read here, for the new year I decided to completely start over my Weight Watchers at week one. Mainly because, quite frankly, I was half-assing it the last go round. However, I'm happy to report that I stuck to my points this week (with quite a few to spare, actually). This + exercising really paid off because this week I lost...

Can you believe it? I lost FOUR pounds! Not gonna lie, I'm pretty proud of mahself! What's funny (or sad, depending on how you look at it) is that this is the same amount I lost in the seven weeks I was "dieting" last time! It's amazing what being in the right mindset can do for weight loss (and you know, sticking to your points + exercising). Before, I was all "what can I get away with eating on Weight Watchers?", whereas now I'm more concerned with making every point count, with only the occasional empty point (i.e. having little to no nutritional value). This time I'm in it to win it!

Happy Friday, everyone! It's been a couple weeks since I last posted my "Friday Favorites". Did you miss it? Well, the wait is over, and I've got some really great stuff to share with you this week. Shall we?

1. After the weather this week with temps in the teens, I am desperately yearning for it to be warm enough to have a picnic. And how fun would this be?

2. Now that I'm back on the diet train, I'm all about the salads. I can't wait to try this one out!

3. I am loving this sweater DIY! I would totally wear this!

4. Reading this news puts a smile on my face. So happy for them!!

5. We never got around to purchasing a mobile for Lola, mainly because the one I wanted was crazy expensive, but I may just have to make one of these!

6. I love everything about this post. So refreshing!

7. I really need to learn photoshop so I can make the kids a coloring book like this. Such a great idea!

8. I'm pretty sure Lola needs these boots! And I wouldn't mind a pair, too!

Our Trip Back Home (Part 1) - My Family

Our trip back to Dallas was so nice. We spend about half of our time with my family and the other half with Dan's. It was really great to be back home. I can't wait till Dan's out of the Navy so we can move back there for good. Which is actually kind of funny because in high school I couldn't wait to leave Texas. Now, 11 yrs later? I can't wait to get back. Funny how time changes things. Now that I have kids, I appreciate my family in a whole new way. They're so very important to me.

I decided that during this time back home, I would really try to just be in the moment, instead of attempting to capture everything on film. And, for the most part, I did just that. While we were staying with my dad and stepmom, Martha, we went to Six Flags, Bass Pro Shop, spent time with my step-siblings and their kids, threw a Christmas party, ate far too much food and just really enjoyed our time together. And, other than the occasional Instagram photo, none of this was caught on film. Which I'm totally okay with! Because instead of trying to capture memories, we were making them.

I did, however, bust out the camera for a quick photo sesh on Christmas Eve, before we headed out to my Grandpa Gary's for lunch. Here are some photos from our morning...

My Personal Resolution for 2012

Hi guys! So we finally made it back home last night! After 3 long days on the road, it felt so nice to sleep in my own bed. Don't get me wrong, I love my family dearly, but I'm glad to get back into the swing of our daily routine. Today's agenda includes: finish unpacking, laundry, a trip to the grocery store, and more laundry, lol.

On our road trip home, I had quite a bit of time to reflect on what it is I want to change in 2012. To be honest, only one thing really came to mind - to lose weight. This is something I've been talking about for ages, but feel I haven't been successful with because I wasn't wholeheartedly into it. I was only partially doing Weight Watchers with little to no exercise, which is obviously no way to lose weight.

Sadly, during my recent go at dieting (which you may have been following via my weekly weigh-ins), I wasn't nearly as invested in the whole process as I needed to be. But, now I can say, without a doubt, that I'm ready. And I'm not just ready to lose a pound here or there - I'm ready to lose a LOT. Like a whole lot. Seventy-five pounds to be exact. I know it won't be easy, but I'm ready to do this right.

Here are some things I'll be doing to reach my goal:

Resetting my Weight Watchers to Week 1 (need a fresh start, yo). My first weigh-in showing this week's progress will be next Monday.
Strictly following my WW points (no cheating)
No eating out (restaurants or fast food), unless we have plans with someone - in which case, I will make sure it's a diet-friendly place and figure out/calculate what I'm eating, beforehand
Exercise 3-5 times a week - I plan on alternating between this video and walking until I can find a gym I like that provides childcare
No desserts (not even Skinny Cow ice cream bars or sammies)

There may be other things that I add or change later, but for now, these are the rules I'm following. Believe it or not, I debated even mentioning any of this here because I felt like it might put too much pressure on me and what if I fail? But guess what? I'm not going to. This isn't something I sort of want, or would like to do; it's something I have to do. Failing is not an option. While my kids may be too young to understand this now, I want them to know that they can accomplish anything they put their mind to. Documenting this is my way of showing them they can do just that. And so I've begun my weight loss journey. Here's to a successful year and a much healthier (and confident) me!

Why, Hello There!

Why, hello there! It's been a while. We're still in Dallas, but I wanted to pop in and let y'all know I'm still alive. Believe it or not, this is the first chance I've had to sit down at my laptop in the last week or so. Not gonna lie, it's been pretty swell. This time with my family has been just what the doctor ordered. My heart is full and these memories will carry me through until the next time we can make it back out here.

Okay, I'm off to spend the rest of the day with my loved ones! We'll be leaving tomorrow morning for VA, so I'll be back to posting regularly within the next few days. I have lots of photos and stories to share, so be on the lookout for those. Oh, and since we'll be on the road and I might not be able to say it then, Happy New Year! I have a feeling this year is going to be the best year yet!

Happy Friday, guys! We're actually leaving for TX bright and early in the A.M. and I have yet to start packing. I am the worst procrastinator when it comes to things like this. Like, for realsies.

What's Cookin'? - Hearty Chicken Stew

Last night for dinner, I made a hearty chicken stew with butternut squash and quinoa. Since it's the second time we've had this meal in the past couple weeks, I figured it was my duty to share it with you guys. Because, my friends? It is the perfect stew for the cold weather. And pretty darn tasty to boot!

Here's what you'll need...

Ingredients:

1 1/2 lb butternut squash, peeled, seeded & chopped into 1/2-inch pieces (I bought precut)
4 cups chicken broth
1 1/2 lb boneless, skinless chicken breasts
1 tbsp olive oil
1 medium yellow onion, chopped
1/2 tsp sea salt
4 cloves garlic, minced
1 1/2 tsp dried oregano
1 can (14 oz) petite diced tomatoes
2/3 cup uncooked quinoa
3/4 cup pitted kalamata olives
freshly ground black pepper, to taste
1/4 cup fresh flat-leaf parsley, chopped

Directions:

Steam butternut squash until tender. Remove half of squash pieces and set aside.
Take remaining squash and mash with back of a fork. Set aside.
In a large saucepan, on med-high heat, bring chicken broth to a simmer.
Add chicken breasts, cover, and cook until chicken is cooked through (about 15 minutes).
Transfer chicken breasts to a plate and allow to cool. Pour broth into a medium-sized bowl.
Return saucepan to stovetop, lower to medium heat and add olive oil.
Add onion and cook, stirring occasionally, until onion starts turning brown (8 to 10 minutes).
Add minced garlic and oregano. Cook for an additional minute, stirring continuously.
Add tomatoes, butternut squash pieces and mashed butternut squash to saucepan. Stir to combine.
Stir in reserved chicken broth and quinoa. Bring to a simmer, cover and cook until the quinoa turns translucent (about 15 minutes).
Shred the chicken with your fingers or a fork.
Stir the chicken, olives and pepper into the stew and simmer, uncovered, until heated through. Top with parsley and serve.

Rolling with the Punches

Last night, we had plans to watch our sweet friend's baby boy. But then, as they were on their way to drop him off, our entire neighborhood's power went out. Fun, right? It turns out a transformer blew, creating a bonfire near the old hospital on post (this is what I heard, anyway). Needless to say, we were unable to babysit baby A.

We were actually smack dab in the middle of making a gingerbread house when this all went down. Luckily, we had a flashlight nearby and were able to quickly finish it up. When we were done, we loaded the kids into the car and headed out to dinner, since we had yet to eat. We took our time and really enjoyed ourselves since there was no sense of urgency to get back home. By the time we returned, our lights and heat were restored and, once again, all was right with ~~the~~ our world.

So, while the night didn't turn out quite like we expected, it still ended up being pretty darn nice. It reminded me that sometimes you just have to roll with the punches. Because you never know what adventures may lie ahead.

Weigh-in Day {Week 8}

I've now been doing WW for a total of 8 weeks. Although, after the copious amount of cheating I did over the weekend, I'm not really sure this week counted. This week I gained...

Weight ~~Lost~~ Gained This Week: 1 lb

Total Weight Loss: -4 lbs

This week was kind of a flop. I take that back...this week I did really well, but this weekend? Not so much. In fact, if we're being honest, I did terribly over the weekend. We ate out on both Friday and Saturday night, then Sunday was just bad. Bacon may have been involved.

I honestly don't know what to say. I just can't seem to get motivated right now. I was supposed to go work out, but didn't. Dan had planned on watching the kids while I went, but then it was raining and cold. Excuses, I know. All I can do is try to do better this week. And today has been really good so far.

As far as exercise goes - since we're leaving for Texas this Saturday and I have about a million things to do before then, I've decided to wait and start my new workout regimen when we return. It'll be the start of a new year, which I'm hoping will help light a fire under my ass to do this thing right.

Then as far as weigh-ins go - I won't be back with another update until January 3rd. My brother-in-law is also trying to watch what he eats, so we're hoping to motivate each other over the holidays. It's always helpful to have a partner when dieting, so this will be nice.

I'm really sorry for not being more of an inspiration. Please don't give up on me!

As I mentioned here, we're celebrating Christmas in our home today (the presents part, anyway). And since I'm feeling all jolly and stuff, I wanted to pop in and say hello! Happy Holidays, everyone! I hope your day has been as good as mine.

It's that time again! I'm actually pretty stoked because Santa's coming to our house this weekend! We leave for Dallas next Saturday morning, so the last day we can celebrate (with our little fam) before heading home is Sunday. Kinda early, I know, but our kids are still young enough that they won't really question why Santa's coming to our house before anyone else's. At least I'm hoping this doesn't happen. I'll have to get back to you next week, once Nico goes to school and tells all his little friends, lol.

Anyway, it should be fun. We're going to make a gingerbread house, bake cookies for Santa and spend some quality time together. I kind of can't wait. But before unplugging for the weekend, I want to share some things I'm loving from around the web this week...

Get Crafty! - Leaf-Painted Christmas Trees

Nico and I did a little project this morning that turned out pretty rad! Since we enjoyed it so much, I thought I share it here with you guys. Check it...

I was already planning on doing leaf painting with the little guy, but with Christmas right around the corner, I thought we'd mix it up and do leaf-painted Christmas trees instead. Livin' right on the edge, I tell ya!

If you want to make your own, here's what you'll need...

And now it's time to begin...

1. First off, you're going to paint your leaf green. The quicker the better, as you don't want your paint to dry.

2. Next, stamp your leaf (paint side down) on a clean sheet of construction paper. You'll want to make sure to press all parts of the leaf down so that you get a full "tree".

3. Repeat steps 1-2 until you have the desired amount of trees (we chose to do three). Then wait for the paint to dry.

4. Once paint is dry, glue the balls on to the tree. The more the better, in my opinion.

5. If you're feeling saucy, you can even paint a tree topper and/or fill in the empty areas with Christmas presents. Ornaments could also be fun. Get creative with it!

And voila! You have a cute little Christmas painting to display for the holidays! Enjoy!!

Since Nico's down for a nap and Lola's...entertaining herself (read: head-banging to Fresh Beat Band), I thought I'd give this little Christmas meme a go! Lord knows, I'm a sucker for a good questionnaire!

Our first Christmas together (2006)

1. Egg Nog or Hot Chocolate? Hot chocolate! I don't do egg nog.
2. Does Santa wrap presents or just sit them under the tree? The gifts from Santa just get put under the tree. All the other prezzies get wrapped, though.
3. Colored lights on tree/house or white? I prefer white lights. Boring, I know.
4. Do you hang mistletoe? No, but maybe I should?
5. When do you put your decorations up? We put 'em up the day after Thanksgiving. It's kind of our thang!
6. What is your favorite holiday dish? Hmm, probably sweet potatoes or green bean casserole.
7. Favorite Holiday memory as a child? Waking up super early on Xmas mornin' to open presents!
8. When and how did you learn the truth about Santa? Wait for it...I didn't learn the truth about Santa till the FOURTH grade. My parents finally told me when I was trying to change my Xmas list last minute. They we're all, "Hey, you can't do that" and I was all, "but Santa's cool with it!"...so they broke the news to me.
9. Do you open a gift on Christmas Eve? I don't, but the kids each open one present of their choice.
10. How do you decorate your Christmas tree? I do the garland (that shit is haaard!), and then we all do the ornaments.
11. Snow! Love it or Dread it? I've been looking forward to snow ever since we moved to VA from San Diego back in April. But now that it's effing freezing out? I sort of think I'm gonna hate it.
12. Can you ice skate? I used to be able to. I think the last time I went was maybe college? I wonder if I still can...
13. Do you remember your favorite gift? I think my all-time favorite gift ever was the CD player I got in the fourth grade. Gone were the days of rewinding. It was awesome!
14. What’s the most important thing about the Holidays for you? Spending time with loved ones, of course! Oh, and starting new traditions with mi familia!
15. What is your favorite Holiday Dessert? I could never pick just one! I love them all!!
16. What is your favorite holiday tradition? My kids are pretty young (1 and 3) so we're still building our traditions, but right now, it's the day after Thanksgiving. We put up the tree, listen to Christmas tunes and watch Christmas movies all day long! It's pretty sweet!
17. What tops your tree? A star
18. Which do you prefer giving or receiving? Giving...minus the expense, part.
19. Candy Canes: Yuck or Yum? Umm, I don't hate them...
20. Favorite Christmas show? It's a toss up between A Christmas Story (loved this as a kid, back before it got all popular) and Elf.
21. Saddest Christmas Song? "Silent Night" maybe? I dunno, I prefer to keep the Christmas jams upbeat.
22. What is your favorite Christmas song? Oh, hands down, Mariah Carey's "All I Want For Christmas is You". It's bad in the best way possible!

Holding on to the Little Things

I have now been doing Weight Watchers for a total of 7 weeks. This week I lost...

Weight Lost This Week: -2 lbs

Total Weight Loss: -5 lbs

While I'm glad I lost weight this week, I'm not exactly thrilled with the overall number. I feel like I should've lost way more than 5 lbs in this amount of time. I know I keep saying I need to exercise, but it's time to stop talking the talk and start walking the walk.

Lucky for me, Dan has offered to watch the kids and make dinner three nights a week, so that I'm able to go to the gym on base (best husby EVER!). We're going to visit the gym on Wednesday, and if all goes according to plan, I'll be working out Wed-Fri of this week. Cool, right? I'm actually really excited to have some (much needed) "me" time!

Hoping to see some real results this week!!

Friday Favorites {12.2.11}

Happy Friday, everyone! This weekend should be pretty exciting (or terrifying) because we have plans to go see Santa! I think Nico will be better this year (as in not screaming bloody murder), but I have a feeling Lola isn't gonna be a fan (mainly b/c she is terrified of people she doesn't know). Also, we need to get Christmas pics done for cards. Of course I've waited till the last minute again and am now in a panic to get it done. ::deep breaths:: So what do you guys have planned this weekend? Anything fun?

What's Cookin'? - Cheesy Vegetable Chowder

Last night for dinner, I made Cheesy Vegetable Chowder. It was delish! Trust me, this photo doesn't do it justice. I literally couldn't stop eating it. It was that good. If you're a soup/stew person, like me, I guarantee you'll love it! Try it out and let me know whatcha think!

Here's what you'll need (to do):

Ingredients:

2 tbsp butter
1 large yellow onion, chopped
4-5 large carrots, chopped
2 large stalks of celery, chopped
1 tbsp minced garlic
4 cups chicken broth
2 large russet potatoes, peeled and chopped
1 tbsp flour
1/2 cup water
2/3 cup milk
2 cups broccoli florets
shredded cheddar
salt and pepper to taste

Directions:

Melt butter in a large pot. Then add onions, carrots and celery and saute over medium heat. Once veggies are tender, add garlic and cook an additional 2 minutes.
Add chicken broth and potatoes, bring to a boil and cook until potatoes are tender.
Mix flour with water, add to pot and cook until soup thickens up.
Add milk and broccoli and allow to cook until broccoli is tender and soup is heated through.
Season with salt and pepper, top with cheese and serve.

Do you remember how exciting it was as a kid to go through the Christmas catalogs and mark all the things you wanted for Christmas? Well, I do. And now I'm getting to relive it through the eyes of my son. I must admit, it is awesome. He is soooo excited for Christmas! We've taught him that it isn't all about the prezzies, but I can't help but to get a little giddy when a new toy catalog comes in the mail. For I know these years of believing in Santa will be gone before we know it. And I intend on enjoying every single second of it!

Weigh-in Day {Week 6}

Today marks week 6 of doing Weight Watchers. Although, I don't know if you can really count this week, since I only followed my points for two days. And it really shows b/c I gained...

Weight ~~Lost~~ Gained This Week: 2 lbs

Total Weight Loss: -3 lbs

**hangs head in shame** I know, I know. I really suck at this whole weight-loss thing. But, I promise to do better this week. I feel like I've gotten all the bad eating out of my system and am ready to jump back on the healthy bandwagon.

This week, my goal is to lose 3 lbs (the two I gained + a pound). Overall, I want to lose 10 more pounds before I return home in 3 weeks. I think this is a pretty realistic goal for me.

Here's to a much better week this week! I think I can, I think I can...

"Pinning" {Week 3} - Dear Santa

So how was everyone's Thanksgiving? Ours was filled with friends, food and football. Not gonna lie, it was pretty sweet.

Anyway, now that Thanksgiving's over, it is time to start thinking about Christmas. Which makes this week's "pinning" theme, Dear Santa, even more perfect! I had originally intended on posting pins from my kids wish lists, but decided to put together a little listy of my own instead. Why? Well, because I've been so wrapped up in what the kids are getting, that I hadn't even thought about what I might like. This gave me the perfect opportunity to ponder this question. I'm loving this Thanksgiving twist on the ever-so-popular "Keep Calm and Carry On" prints. So clever! And fitting, being that Turkey Day is, you know, tomorrow and stuff.

What's Cookin'? - Crock-Pot Honey Chicken

Sunday night for dinner, we had Crock-Pot Honey Chicken. It is seriously one of the easiest recipes ever, and great for when you're short on time (aren't we all?). It's almost comical how simple this was to make. If you like your slow-cooker half as much as I do, then you'll love this recipe!

Here's what you'll need...

Ingredients:

3 chicken breasts
1/2 tsp salt
1/4 tsp pepper
1/2 cup honey
1/4 cup soy sauce
1/4 cup chopped onion
1/8 cup ketchup
1 tbsp vegetable oil
1 clove garlic, minced
1/4 tsp red pepper flakes

Directions:

Season both sides of chicken breasts with salt and pepper and place in crock-pot.
In a small bowl, combine remaining ingredients and then pour over chicken.
Cook on high for 1 1/2 hrs (or low for 3 hrs).
Next, remove the chicken and cut it into bite-size pieces. Then return to pot and coat with sauce.
Serve over rice (we used brown) and enjoy!

I know it's only a pound, but I'll take it. After all, it sure beats the hell outta the zero pounds I lost last week!

With Thanksgiving coming up, I'm just hoping to maintain my weight this week. I plan to follow my diet every day except Thursday, because on Thanksgiving? I plan to grub. I mean, don't get me wrong, I'm not gonna go all Garfield-style on the food or anything...but, I do intend on indulging a little. I've said all along that if I could stick to my diet up until Thanksgiving, I would allow myself a free pass on this day. And for the most part? I did just that. So this Thursday, you'll find me (mindfully) enjoying myself some Thanksgiving sides (because as I expressed here, I couldn't care less about the turkey)!

Woo hoo, it's Friday! I'm even more excited than usual, because after tonight, the hubs is officially finished with school for the year! This means a) more quality time with him and b) some much needed "me" time. I can't wait!

Any Twi-hards out there? Are you guys excited for Breaking Dawn or what? I originally intended on going to see it this weekend, but a girlfriend and I decided to wait and go once the crowds die down. Because crowds? Just aren't really my thang (anti-social much?).

A Short Visit with Grandma

Late Monday evening, my mom arrived in DC for a short layover (she's a flight attendant), so first thing Tuesday morning, the littles and I high-tailed it over to her hotel to spend the day with her. She lives in Texas, making our visits few and far between. Needless to say, this time with her was super special.

Since her hotel was in Alexandria, we ended up spending the day in Old Town. We ate at La Madeleine (which I didn't even know existed out here, btw) and then did what we do best - shopped!

Here are some photos from our day (my DSLR died before we made it out of the hotel, so I apologize for the poor quality of the outdoor photos - they were shot with my, old as fudge, point-and-shoot).

This was our first time in Old Town and I must admit, it was quite nice! There were a ton of antique shops, boutiques and whatnot. We, unfortunately, skipped over the antique shops because, well, old expensive things and my kids don't exactly go hand in hand. However, we do have plans to return soon, sans kids. It was so nice to spend the day with Mom/Grandma. We can't wait to see her again!

My baby girl is ONE today, which I really can't seem to wrap my head around. It feels like just yesterday we were bringing her home from the hospital. For this reason, I'm even more emotional than normal and may or may not have already played this song a handful of times...

I'm not really a country music fan (more of an indie rock kinda girl), but can't seem to get enough of this song! What can I say? I relate.

Things have been uber busy around here the past couple of days, so we'll be keeping it relatively low-key tonight. I'll be making stuffed shells, followed by cupcakes and present opening. Then this weekend we plan on taking the kids somewhere fun to celebrate (as I mentioned here, we decided to forgo a big party this year).

Okay, I'm off to play "dahs" (dolls) with my ~~baby~~ big girl!
